Most Irish food is very versitile and can be modified with what's in the house now. Remember, Irish food is all about being tasty, filling, easy, and inexpensive. As a side note to 'being authentic' the Irish do not eat corned beef and cabbage on St. Pat's day. Most of the Irish in Ireland have never even heard of it. Corned beef is an American tradition that began with the need to preserve food for shipment before refridgeration. Most Irish celebrate with a traditional brown bread, soda bread, or brambrack, enjoy a nice stew or boxty, add some sort of potato dish, top it off with a Guinness, something sweet, and call it a meal.
