Irish Pancakes

Sweet thin pancakes that can be rolled like crepes and filled with anything you want. These gems will barely make it out of the kitchen, so double that recipe, and get lots of fruits, syrup, butter, and powdered sugar ready!

1 cup plain flour
pinch of salt
2 eggs
1 cup milk
1 tbsp melted butter

Put all the ingredients in a blender (wet ingredients first)and blend for about 30 seconds. Let the batter stand for about 30 minutes (enough time to make bacon, or cut fruit). Pre-heat your pan or griddle to medium heat. Grease the pan with a little butter or shortning. Pour about two tablespoons or so out onto the griddle, and cook them. If they are thin enough, they can go without flipping, especially if you serve them rolled up. Stuff them with fruit, bacon and eggs, btter, whatever you like. Spinkle with powdered sugar, maybe drizzle a little syrup on them...Go nuts!

He Said...
She Said...

MMMMM. They don't look like much, but you better believe that the whole family will stand behind you at the stove waiting their turn to try a new topping or filling. We had great fun experimenting with different combinations of butter, powdered sugar, bananas, syrup and so on. Made for a fun everybody-in-the-kitchen-as-a-family start to the day.

I was skeptical at first, but these are really good. They are almost like crepes. I liked them plain with powdered sugar or maple syrup, but they were absolutely delicious with sliced bananas in them. I actually was upset that we didn't make more.

Just ask. Seriously, it's not a problem. No...really. We might want a reciprocal link or something, but what's the worst that could happen, we say "yes"?
